Mickie Sherwood’s Christmas Treat and More!

Nuts come in all shapes and sizes. They are in a variety of colors and shades. When being shelled, some are harder to crack than others. NUTS That’s why I buy mine already shelled in the bag. Pecans, we call them puck-ons in my neck-of-the-woods, are my favorite. I love them plain. But, they’re delicious sugared and toasted. I sugared a half bag for a Christmas treat. Here’s the simple recipe.

Ingredients:

2/3 C. Brown Sugar

1/2 lb. Pecans

2T. Margarine

1) Mix brown sugar and margarine until grainy.

2) Add pecans. Stir until coated and sugary.

3) Spread on ungreased sheet of foil.

4) Bake at 350* for 5 minutes or until toasty.

5) Let them cool. Then, enjoy! Hmmmm. Tis the season for giving.

In the mood for something tasty to shoo away the winter chill? Author/editor Jan Carol shares a couple of her favorite recipes.

 

Jan’s Hot Cocoa Mix (Yes, it’s my recipe.)

Ingredients:

6 cups powdered nonfat instant milk

3 cups sugar

2/3 cup unsweetened cocoa

1 tsp salt

1 cup non-dairy creamer (I use CoffeeMate – or store brand – French Vanilla, Amaretto, or Hazelnut flavors.)

 

Mix well together, keep in air-tight container. To use: place 1/4-1/3 cup mix in mug, add 8 oz. HOT water.

 

 

Easy Chicken Pot Pie (My husband’s recipe.)

Ingredients:

2-4 chicken breasts (How much meat do you like?)

3 cans mixed vegetables

1 can cream of mushroom soup

1 can cream of chicken soup

1 onion, chopped as desired (We like large pieces.)

 

Cook chicken well, cut up in chunks or shred with fork. In large bowl, add vegetables, soups, onion and chicken; mix well. Place in 9×12″ dish.

 

1 cup flour

1 cup milk

1/4 cup mayonnaise

Mix flour, milk and mayonnaise together and spread over chicken/vegetables. (My husband likes to double the topping mix. The rest of us like the thinner crust.)

 

Bake at 350* for 1 hour.
